How to make ginger-fried plum jam
Step 1: Choose large, ripe plums that are not too soft or too hard. Then, wash them, soak them in diluted salt water, and drain. Then, use a knife to score the plum lengthwise to prevent crushing or score around the fruit.
Step 2:
Soak plums in lime water for 4-5 hours, then rinse with cold water and drain so the plums are soft and not crushed.
Step 3:
Soak plums with 0.5 kg of sugar for 1 day. If you want less sourness, choose ripe plums. If you want green plums, soak them longer, about 2 days, to let the sugar soak in.
Step 4:
After the plums have melted and absorbed the sugar, put them on the stove and stir evenly over low heat until the plums absorb the sugar. Cook until the skin and flesh of the plums turn red and the sugar water thickens. While cooking, shake the pan occasionally, do not stir the plums too much or they will be crushed.
Step 5:
Crush, pound or chop the ginger depending on the amount you want to eat. Squeeze out the ginger juice to remove the spiciness and bitterness, then add it to the plum pan and stir gently to avoid crushing the plums. When the sugar thickens and dries, turn off the heat.
Step 6:
Place the plums on a baking tray if you have an oven at 100 degrees for 1 hour to dry the plums and make them soft. With an air fryer, leave for 30-40 minutes. Wait for them to cool, put them in a glass jar and put them in the refrigerator to make them hard and soft. They will be delicious to eat at this point.
