Black Chung Cake - Culinary quintessence of the Tay people

Unlike the green banh chung in the lowlands, the Tay people in Bac Ha (Lao Cai) have a unique type of banh chung, with rice mixed with charcoal from the núc nác tree, along with some typical spices of the mountainous region. That is the black banh chung, a type of cake that used to only appear during Tet, but is now quite popular and has become a specialty that many tourists look to buy when coming to this land.
