With a coastline of more than 3,000km and a rich river and stream system, Vietnam is blessed with a diverse source of fish, which is not only an ingredient for daily meals but also develops into a culinary art rich in identity.
Each dish tells a story about the sea, rivers and the lifestyle of the homeland people.
Vinh Long Chefs Association brought 7 fish dishes to the program. Among them, chef Anh Kiet introduced braised catfish with turmeric and lime - a specialty of Vinh Long.
The cooking method is quite simple: the fish is cleaned, the scales are kept intact, cooked with a light braising liquid including diluted coconut water, onion, garlic, seasoning powder, fish sauce, and young tamarind to create a light sour taste, served with raw vegetables and chopped mango.
"The toadfish is sensitive to fire so it doesn't need to be cooked for long. This type of fish in Vinh Long is tastier than other places, especially when braised and eaten with the scales," Mr. Kiet shared.
Mr. La Quoc Khanh, Vice President of the Vietnam Culinary Culture Association, shared at the conference: In the past, fish was just an ingredient for daily meals. As life developed, fish dishes were not only limited to family meals but also became culinary products serving society.
Setting the record brings pride to Vietnamese chefs, contributing to promoting Vietnam's culinary economy and tourism.
The organizers said that after the event, the program will continue its charity journey, cooking fish dishes to send to people in the highlands, bringing a message of love and sharing.
