Sesame rice paper of Nguyen Lam Cooperative (Ky Anh Commune) has long been a familiar product to domestic consumers, and is also exported to the Japanese market. The fourth quarter is the peak production period, the Cooperative has to hire more seasonal workers to operate the production line effectively. Each stage, from raw material handling, processing, drying to packaging... is carried out rhythmically by workers, producing more than 25,000 rice paper pieces per day.

Mr. Le Van Duan - Director of Nguyen Lam Cooperative said: "Previously, sesame rice paper production depended a lot on the weather, especially during the rainy season when it was almost impossible. Now, thanks to the application of technology, we can maintain production all year round. Modern machinery helps to unify the design and quality, while the traditional recipe creates a unique, delicious and nutritious flavor."

The end of the year is always the "golden time" to consume OCOP products. Therefore, currently, Nguyen Lam Cooperative is accelerating to reach an output of 6 million cakes in the year, of which about 25% is for export. Nguyen Lam 4-star OCOP sesame products will also participate in the upcoming 2025 Autumn Fair organized by the Ministry of Industry and Trade to promote and expand the consumption market at the end of the year.

In the fourth quarter of 2025, Phu Sang Seafood Processing Service Cooperative will bring nearly 20,000 liters of fish sauce to the market.

With the main product being fish sauce, traditional OCOP fish sauce production facilities of Ha Tinh such as: Phu Khuong (Ky Xuan commune), Luan Nghiep (Hai Ninh ward), Thu Hung, Phu Sang (Thien Cam commune) ... are also busy increasing capacity.

Phu Sang Seafood Processing Service Cooperative (Thien Cam commune) is one of the typical units when fish sauce products meet 4-star OCOP standards. Ms. Nguyen Thi Sang - Director of the Cooperative said: "Nhuong Ban fishing village used to be famous for making fish sauce, now it has had stable development thanks to participating in the OCOP program. We focus on creating uniform products, improving packaging, labels, registering intellectual property and applying QR codes to make information transparent, increasing consumer confidence. The fourth quarter is the strongest consumption time of the year, so the unit proactively opened a showroom, organized experiences of the fish sauce processing process, and actively participated in fairs and trade promotion programs. It is expected that in the fourth quarter of 2025, the facility will bring to the market nearly 20,000 liters of fish sauce, bringing the total annual consumption output to over 35,000 liters, an increase of about 15% compared to 2024".

As a popular product in winter, An Phu Beekeeping Cooperative (Mai Hoa Commune) is also rushing to complete the harvesting, processing and packaging of honey to serve the year-end market. The unit currently has 2 3-star OCOP products at the provincial level: pure honey from male papaya flowers Manh Hung and pure honey from Vu Quang.

Mr. Dau Khac Manh - Director of An Phu Beekeeping Cooperative shared: “OCOP is the “passport” that helps our products go further. In 2025, with 15 members, we aim to consume 5.5 tons of honey, with a revenue of nearly 900 million VND, contributing to increasing income and changing the face of Ha Tinh’s rural economy . The Cooperative not only participates in fairs to promote products but also cooperates with the Cooperative Union of provinces to expand distribution channels and connect to the market.”

An Phu Beekeeping Cooperative (Mai Hoa commune) strives to consume 5.5 tons of honey this year.

According to Mr. Truong Van Thuan - Deputy Director in charge of the Provincial Center for Industrial Promotion and Trade Promotion: Currently, Ha Tinh has 166 typical rural industrial products at all levels and 267 provincial OCOP products. The end of the year is a period of strong consumption, the Center has coordinated with units to organize many programs to support OCOP establishments such as: training on brand building, supporting registration for voting for typical products, participating in fairs and promoting on major e-commerce platforms such as: Voso, Postmart, Sendo, Shopee...

In addition, units are also facilitated to participate in provincial, regional and national trade fairs; connecting businesses to expand domestic and export markets. Thanks to that, many OCOP establishments have affirmed their position, increased revenue and created more jobs for local workers.

In practice, Ha Tinh OCOP products have the opportunity to increase output by 10-30% in the final period of the year. The acceleration of OCOP establishments not only shows the strong vitality of the rural economy but also affirms the clear effectiveness of the "One Commune One Product" program. From traditional products such as sesame rice paper, fish sauce, honey, rice paper, dried seafood, etc., many cooperatives have proactively innovated technology, improved quality, built brands and expanded markets, contributing to increasing the value of local agricultural products.

The end of the year is the "golden period" for OCOP establishments to consume products.

However, to maintain a stable reputation in the market, the industry recommends that facilities continue to comply with processing procedures; strictly control the quality and origin of raw materials; and continuously improve quality to meet technical standards and consumer tastes. At the same time, it is necessary to continue promoting digital transformation and building a sustainable development strategy. In the context of increasingly deep integration, continued investment in brand promotion, connecting value chains and expanding export markets will be the decisive factors for OCOP Ha Tinh to not only "accelerate" during the peak season at the end of the year but also affirm its position in the long-term market.
