Aunt Thanh, owner of the Dong Ha City overpass sandwich cart, is 65 years old this year, residing in block 8, ward 1, Dong Ha City ( Quang Tri ). Previously, aunt Thanh sold sandwiches at the old Dong Ha bus station, but has now moved to sell at home.

No borax or preservatives

It is no coincidence that this simple noodle cart has existed for nearly 30 years. Aunt Thanh shared that for those in the business, the most important thing is the heart. According to her, you have to put all your heart into the food, how to make the dish the most delicious, cleanest, ensure food safety, only then can you stay in the business for a long time...

The bread with salt, pepper and some Vietnamese coriander leaves looks very simple, but it makes a difference. Just pork skin and pork sausage but it has created a unique flavor for the noodle dish as well as making customers remember it forever.

Cha contributes to making "extraordinary" loaves of bread.

"What makes the difference, and also my pride, is that the sausage never contains borax or preservatives. The sausage is always served with hot bread, and you can blow on it while eating. I always listen to customers' feedback and make positive changes every day, perhaps that's why customers come back here many times. There are many regular customers who have eaten here for decades," said Aunt Thanh.

Customers line up to buy Aunt Thanh's bread

"On average, the shop sells 30 pork skin rolls, 10 pork rolls and more than 300 loaves of bread every day. It has been going on like this ever since, with no signs of slowing down. Many people who come later, run out of pork rolls, and keep asking why the shop doesn't make more to sell. But I'm really old, I don't have the strength to do more. My children are grown up now, each with their own job, and I don't know if anyone will continue this profession," said Aunt Thanh.

Mr. Nguyen Duc Hung, a long-time customer, said he has been eating bread here since he was in elementary school. Now that he has a wife and children, he still cannot forget the taste of the bread here. The pork skin is delicious, smooth and chewy, and a bite with bread is great...

"There was a time when I only ate banh mi cha here for a whole month. Every morning when I woke up, I craved banh mi cha, and couldn't think of anything else. I've tried many places, but honestly, it's hard to find a place that has the same delicious taste as here. The cha da here is very different," Mr. Hung praised.

During the holidays, Quang Tri compatriots from many places order Aunt Thanh's sausages. Sometimes she sells 100 sausages a day. Aunt Thanh also wants the food she makes to be known and loved by many people, but because she does not use preservatives, the sausages cannot be kept for long, making it difficult to transport to far away customers.
