Caviar is so expensive because a sturgeon has to live for over 20 years before it starts to produce eggs. To get the eggs out of the fish's stomach, people have to go through a rigorous process.

Caviar is considered the standard of high life.

For a Caviar sturgeon to produce eggs, it must be at least 15 years old, which is a very long time, and if it is a fish raised in an artificial environment, the cost is also very high.

Not only that, the number of sturgeon in the wild is decreasing day by day, not meeting the ever-increasing demand of the market, which is the main reason why this item has a high price.

In particular, some rare sturgeon species and wild sturgeon caught in the Caspian Sea command incredibly high prices.

Because it is so expensive, caviar is often used as a garnish for appetizers, as a side dish, spread, or in sushi, and is usually only served in top luxury restaurants.

Sturgeon are raised on farms, and after being caught, they are scanned with ultrasound to see if the eggs in their bellies are mature. Then, they use a special technique to extract the eggs without cutting the fish open.

The egg retrieval process must also be extremely careful. The specialist will insert his hand under the ovary to completely sever the stem. After the retrieval, the ovary will be gently rubbed on a wire mesh to separate it and then frozen.

Caviar contains many nutrients such as: calcium, phosphorus, protein, magnesium, iron and various vitamins B12, B6, B2, B44, A, C and D.

In addition, sturgeon eggs also contain the minerals arginine and histidine, along with many amino acids such as omega-3, lysine, isoleucine, methionine...

These substances can help reduce the risk of depression, prevent heart disease and have the effect of increasing blood circulation.
