Is it okay to store dinner for lunch the next day?

I usually cook at night, put it in the fridge and bring it to work the next day, but I heard that it will lose nutrients and be susceptible to bacteria. Is that true? (Hanh, 29 years old, Hanoi )

Preparing your own meals is both hygienic and economical . Home-cooked dishes are complete, delicious, healthy and tasty.

However, not all dishes can be left overnight. Improperly preserved food can be contaminated, poisoned, and lose nutrients. Overnight food is often not as delicious as hot, immediately cooked food. For example, vegetables, soups, and eggs should not be left overnight. Fried dishes when reheated are often dry, not crispy and fragrant. Reheated cold rice can still be eaten but does not retain its original delicious flavor.

If you don’t have time to cook early in the morning and don’t want to eat out, you can prepare food in advance or just stock up on savory dishes like braised fish or braised meat. Vegetables and eggs can be cooked the next morning.

Leftover food should be stored in sealed containers with lids or wrapped tightly with plastic wrap to avoid odors. You should arrange food in the refrigerator properly, in moderation, each type in a separate compartment, and not mix cooked and raw food.

When you take food from the refrigerator, you need to reheat it to make the meal more delicious and attractive. You should keep the refrigerator clean to limit the growth of bacteria.
