Bean sprouts and meatball soup
Ingredients for making bean sprouts and meatball soup:
+ 300g minced meat, pea sprouts
+ Ginger powder
+ 1/2 teaspoon white pepper, oyster sauce, salt, soy sauce
+ Green onions
+ 60g starch
+ Minced garlic, minced shallot
Making:
Step 1: Prepare the minced meat filling. Add a little ginger powder, ½ teaspoon pepper, oyster sauce, fine salt, strong soy sauce with chopped green onions and cornstarch then stir well to form a meat mixture.
Step 2: Fry the shallots and minced garlic until golden brown and fragrant, then add boiling water to the pan, season with 1 teaspoon of salt and pepper. Reduce the heat to low, use a spoon to gently drop each meatball into the pan, keep the heat low and simmer evenly, do not stir so that the meatballs do not fall apart.
Once the meatballs are cooked, increase the heat and cook for another 7-8 minutes, finally add the bean sprouts and wait for it to boil.
Bean sprout and meatball soup is easy to make and nutritious to eat in the fall.
Winter melon and mushroom soup
Ingredients: 500g squash, 50g scallops, 50g mushrooms, 2 eggs, garlic, onion, shredded ginger, pepper, salt.
Making:
Step 1: Peel the squash, clean it and cut it into thin slices. Slice the mushrooms and set them aside.
Step 2: Saute chopped garlic and green onions until fragrant, then add the clams and shredded ginger. Next, place each slice of squash in the pan, season with a little salt and stir-fry. Pour boiling water, add mushrooms and cook for a few minutes until the ingredients are soft, then slowly pour in the beaten egg mixture. Finally, season again, sprinkle with pepper and add some chopped coriander.
Enoki mushroom and egg soup
Ingredients: 1 handful of enoki mushrooms, 1 egg, a little dried shrimp, sesame oil. Green onions, coriander, salt, white pepper, a little wolfberry and common spices.
Making:
Step 1: Clean and chop the enoki mushrooms, then set them aside.
Step 2: Heat some oil in a pan, then add onions and garlic and sauté until fragrant, pour boiling water into the pot and bring to a boil again, gently drop in enoki mushrooms. Next, add beaten egg water and dried shrimp, season with salt, pepper, MSG and cook gently and stir well.
Place the coriander in a bowl. Once the soup is done, slowly pour the hot broth into the bowl. Finally, sprinkle some goji berries and sesame oil to enhance the delicious flavor of the dish.
Lobster and shrimp soup
Ingredients for squash and shrimp soup: 1 large squash, seafood mushrooms, 8 shrimps, 1 egg. Seasoning: salt, pepper, MSG.
Making:
Step 1: Peel and clean the shrimp, keeping the heads for the next step. Marinate the shrimp with a little white pepper to let the spices soak in.
Fry eggs until golden brown. Peel squash and cut into bite-sized pieces.
Step 2: Heat the pan, add the shrimp heads and fry to extract the delicious essence, then add boiling water and boil with the shrimp heads for a few minutes to get the broth.
Remove the shrimp heads, add chopped fried eggs to the pot, bring to a boil over high heat, then reduce the heat to low and simmer for about 5 minutes, enough time for the eggs to absorb the flavor. Finally, add the marinated shrimp, seafood and squash and cook until the ingredients are cooked. Before removing from the heat, sprinkle some goji berries on top for a more delicious and beautiful look.
Pork liver and spinach soup
Ingredients: 100g pork liver, 1 handful of spinach, wolfberry, ginger. Spices, white pepper, green onion, starch.
Making:
Step 1: Soak the liver in cold water to remove blood and unwanted impurities. Then blanch it in boiling water, remove it and marinate it with ginger, pepper, and starch to let it absorb the spices.
Saute green onions and ginger, then add boiling water and pork liver to the pot. Next, quickly add the ingredients and spices, spinach and season to taste. After ladling the soup out, sprinkle goji berries lightly on top to enhance the nutritional value of the dish.
