Mooncakes with mixed rice paper filling are causing a stir

A bakery in Ho Chi Minh City is attracting a large number of customers with its mooncakes containing... mixed rice paper.

Mixed rice paper - a familiar street food is suddenly "upgraded" to become the filling of a full moon cake, combining the typical salty, spicy, sour, sweet flavors and the soft, smooth, fragrant crust. The filling is made from beef jerky, dried pork floss, pork sausage, pork skin, Vietnamese coriander, onions, garlic and dried mango. In the middle is a fatty, salty, rich salted egg floss sauce, creating a flavor that is both familiar and strange.

Late at night, Ms. Nguyen Thi Truc Mai (30 years old), living in An Khanh Ward, Ho Chi Minh City (formerly An Phu Ward, Thu Duc City) stopped by a bakery on An Khanh Street (formerly Thao Dien Ward, Thu Duc City) to buy moon cakes. After trying a few flavors, she stopped longer in front of the tray of moon cakes with mixed rice paper filling. "The cakes are very delicious and unique. The taste is like eating real rice paper, I really like it," Ms. Mai shared. She immediately bought 4 boxes to send to relatives and friends.

According to Tran Quoc Hoa (21 years old), a cashier at the shop, the mooncakes with mixed rice paper filling have been "sold out" since the beginning of September. "Each cake is a combination of both strange and familiar things. The mixed rice paper has dried beef, dried mango and salted egg floss sauce, so it is very popular with customers," Hoa said.

Not only mixed rice paper, this year's "Mid-Autumn Festival Memories of Childhood" collection of this bakery also includes 6 flavors inspired by familiar snacks such as: mixed rice paper, coconut candy, orange cake, mixed seafood with XO sauce, mixed vegetarian and yuzu lava with salted egg.

Ms. Laure Chevallier (French), brand representative, shared that the inspiration for this year's collection comes from the childhood memories of the baking team itself. "We wanted to recreate the flavors of childhood, recalling the bustling Mid-Autumn Festival nights of the past, when children ran around the streets, chasing street vendors amid the distant sound of firecrackers. Mixed rice paper, orange cake and coconut candy naturally came to mind as symbols of that nostalgic feeling."

However, according to Ms. Laure Chevallier, the biggest challenge is to recreate the true flavor and texture of mixed rice paper in the form of moon cakes. "Quail eggs are a typical part but are not suitable for preservation, so we replaced them with salted eggs to keep the traditional spirit of moon cakes while creating a familiar fatty and salty feeling. We cleverly arranged pork sausage, lard, Vietnamese coriander, dried mango, fried onions and peanuts so that each piece of cake has a different flavor as if eating mixed rice paper on the sidewalk," she said.
