Wash the prepared mung beans, then soak them in water for about 2 hours to soften the beans. Then, take them out and put them in a pot, add water to cover the beans and boil until the water boils, then reduce the heat to low. Continue cooking for about 20 minutes until the beans are soft. Put the cooked mung beans into a blender and blend until smooth.
Next, put the pureed beans into a non-stick pan, add 100 grams of sugar, 1/2 teaspoon of salt and stir well.

Cover the dough with plastic wrap and let it rest for about 30-45 minutes.

Then, use a mixer to mix the above mixture together. Next, knead the dough by hand until the dough becomes smooth and elastic, and does not stick to your hands.
Cover the dough with plastic wrap and let it rest for 30-45 minutes. Divide the dough into equal portions, each about 42 grams, and roll them into balls. Similarly, take the mung bean filling and roll them into balls.
Next, sprinkle and rub a little dry flour on your hands and a clean flat surface to prevent sticking. Place the dough ball on the flat surface and use a rolling pin to roll it into a circle with a diameter twice the diameter of the filling. Note, do not roll the dough too thin as it will tear easily and make it difficult to wrap the filling.
Next, place the filling in the middle of the dough and squeeze the edges of the dough together, covering the filling, and roll the dough to make it round and beautiful.
Place the balls in a tray, cover with a clean damp cloth to prevent them from drying out. Continue until all the ingredients are used up.
To prevent sticking, spread a thin layer of cooking oil on the bottom of the mold, rub a thin layer of flour on the bottom of the cake, choose the smooth part of the cake to put in the mold and press firmly to shape. Now you have a moon cake with eye-catching patterns.
Before baking, preheat the air fryer at 150 degrees Celsius for 10 minutes. While waiting for the fryer to heat up, take 1 egg yolk and 4 teaspoons of milk into a bowl and stir well.
Green bean mooncakes will be softer and tastier if you leave them overnight.
After 10 minutes, take the pot tray out, line the tray with parchment paper to prevent sticking. Then, arrange the moon cakes in the pot and bake at 150 degrees Celsius for 5 minutes.
After 5 minutes, take the cake out, let it cool completely, then use a brush to spread a thin layer of the mixture around the cake. Place the cake back on the tray, continue baking a second time at 150 degrees Celsius for 5 minutes.
