- Pig's trotter: 1 piece

- Dried bamboo shoots: 300g

- Dried onion, ginger, seasoning powder, cooking oil, fish sauce, green onion

How to cook bamboo shoot and pig's feet soup

Soak the dried bamboo shoots overnight, then wash them several times with water and boil them for 5-10 minutes, then take them out and wash them again. You can boil the bamboo shoots 2-3 times, washing them continuously to remove the smell and color.

Squeeze out the water from the boiled bamboo shoots, shred them (for large pieces) or cut off the old parts (if any). If the bamboo shoots are already shredded, there is no need to do the above step.

Wash the pork leg with salt, lemon juice or a little white wine to remove the smell. Choose the front leg because it has more meat and tastes better than the back leg.

You can ask the seller to help chop the ham hock into bite-sized pieces to avoid breakage, meat sticking to bones, affecting the quality of the bamboo shoot soup.

Boil the pig's feet with a few slices of ginger, a little seasoning and 1 shallot, then remove, wash and drain.

When the ham hock is dry, marinate with a little seasoning powder, fish sauce and minced shallots.

Wait for the ingredients to absorb the spices, then put them in the pot, stir well with a little cooking oil. When the pork leg starts to firm up, add water, simmer for about 30 minutes.

While stewing the soup, season to taste so the pork leg absorbs the flavor and becomes more flavorful.

When the pig's feet have stewed long enough, add the bamboo shoots and cook together. Wait 5-10 minutes for all the ingredients to cook, then turn off the stove, ladle the soup into bowls and sprinkle chopped green onions on top.
