
The activity aims to contribute to promoting the quality of Da Lat agricultural products; at the same time, introducing how to prepare dishes from artichokes, vegetables and local green foods on the occasion of Lam Dong Tourism Destination Experience Month 2025.

The main ingredients of the hot pot are artichokes and H'Mong chicken - a type of chicken with black skin and bones, known for its toughness, firmness, and high nutritional value.
This is a native chicken breed of the H'Mong people, originating from the Northwest region, and is now commonly raised in the Central Highlands region.

With passion and creativity, Lam Dong's professional chefs have used local ingredients to create nutritious dishes that have their own mark on cold-country cuisine .

In 2023, the Lam Dong Provincial Professional Chefs Association set a record of 146 dishes made from artichoke plants and flowers, with the participation of more than 100 chefs from provinces and cities across the country.
Since then, artichoke has become a popular ingredient in the menus of many restaurants in and outside the province, contributing to spreading the local culinary flavor to a wide range of diners.

The wild artichoke hotpot is made from artichoke flowers of the right age, not too young, not too old, which helps them to be soft and sweet when stewed. The chicken is also chosen to be of the right age to retain its toughness and characteristic aroma after stewing.

Artichoke hotpot is a macrobiotic dish, using few complicated spices; mainly familiar spices found in family kitchens such as salt, cordyceps mushrooms, traditional Chinese medicine such as red apples, wolfberries, lotus seeds...
