The bowl of noodles is topped with a layer of crispy fried onions and fatty, nutty roasted peanuts. Before eating, diners use chopsticks to mix the ingredients to evenly absorb the spices, revealing the green color of the vegetables and the white color of the noodles along with beef sausage, stir-fried beef, and bean sprouts.
Although there is not much beef in a bowl due to the addition of beef ham, it is well marinated and stir-fried until just sweet, tender, and fragrant. The other ingredients are not marinated, with original flavor, but are soaked in a sweet and sour broth, rich in fish sauce flavor.
The restaurant only sells Southern beef noodle soup, but there are many price levels for customers to choose from depending on their appetite, ranging from 40,000 - 70,000 VND.
The restaurant’s customers are mostly regulars and young people, known through posts on social media. Although the “fire dance” in the kitchen attracts customers, what keeps customers coming back is the clean food and fresh ingredients, according to Ms. Nguyen Thi Lan, 38, who lives in Khuong Thuong and has been a regular customer of the restaurant for many years.
