Ms. Pham Soan (Cau Giay District, Hanoi) opened a shop selling vermicelli soup on Vu Pham Ham Street (Cau Giay) on the 28th of Tet and sells throughout the Tet holidays. According to Ms. Soan, the sour taste and aroma of the broth blend with the crunchy taste of the snails, making it very tasty.
"I sell from December 28 and sell throughout Tet. The price of a bowl of vermicelli soup fluctuates about 30%, because during Tet, the price of raw materials is higher than usual, and labor costs are also higher," said Ms. Soan.
Although large restaurants have not yet reopened, sidewalk food stalls have opened on all streets to serve diners' needs for a change of dishes during Tet. According to the reporter's observations on Trung Kinh, Vu Pham Ham, Ho Tung Mau, Hoang Quoc Viet, Lac Long Quan streets,... many restaurants have opened early to serve customers.
According to Ms. Soan, on normal days, she sells a full bowl of vermicelli soup with crab soup, beef shank, ham, and ribs for 50,000 VND, but during the 3 days of Tet, she sells it for 80,000 VND. Every day, Ms. Xoan sells 500 bowls of vermicelli soup, equivalent to a ton of vermicelli.
Enjoying vermicelli soup on the third day of Tet, Ms. Truong Thi Thanh Hau said that this is a light dish, very good to relieve the feeling of fullness after Tet days of "loading" with many dishes such as jellied meat, banh chung, bamboo shoot soup, fried spring rolls, ham, chicken...
“A bowl of vermicelli with snails costs 80,000 VND, which is a bit high, but we understand that while everyone is back home for Tet, they still serve customers, so the rent, labor, and materials are all higher. This price is not a rip-off, but they are public and fully listed, so anyone who wants it can eat it,” said Ms. Truong Thi Thanh Hau (Cau Giay District, Hanoi).
The Thai noodle shop on Vu Pham Ham street also opened on the third day of Tet. The shop is right at the front, so it is very crowded.
Ms. Duong - manager of the Thai noodle shop said that the price of a bowl of noodles during Tet is higher than usual, because there are few suppliers delivering, the staff's salary is increased 3-4 times to "keep" them serving during Tet. Accordingly, a bowl of tomyum noodle with beef costs 70,000 VND.
“Although the price is high, the quality of the products is better, the broth is also more special, so that customers are satisfied and happy. If customers are happy, we are also happy,” Ms. Duong said, adding that the average number of diners per day is about 200 people.
In the first days of the new year of Giap Thin, shops on Phu Tay Ho street, Quang An ward, Tay Ho district, opened their doors simultaneously. Customers came to enjoy vermicelli with snails, vermicelli with crab, vermicelli with fish, shrimp cakes, tapioca cakes, etc.
Ms. Hoai Tu, representative of Nguyet Nga snail noodle shop on Phu Tay Ho street, said that to make customers feel comfortable when visiting the shop during the first days of the year, the shop clearly informs the price of each dish.
