Akay snakehead fish noodle soup is a famous and very popular dish in Mang Den. The dish is made from familiar ingredients, however, it is the meticulousness in the preparation, the skillful combination of flavors with diverse "toppings" that creates the special, unforgettable taste of the dish.

The noodles in the dish can be made from wheat flour or rice flour (tapioca flour) depending on the choice of the diner. The snakehead fish is selected fresh, then steamed, and large, firm pieces of meat are removed. The broth is simmered from the head and bones of the fish to create a natural sweetness.

The special thing is that Akay snakehead fish noodle soup will be put into each stone pot, cooked directly on the stove.
