Unique production process of traditional craft village specialties of Tho Xuan district

One of the specialties of Tho Xuan district is the rice cake with the leaves spread out. This type of cake is made a lot in Xuan Lap commune.

To make the cake, people often choose even-grained, shiny, fragrant rice, soak it in cold water for about 2-3 hours, then grind it into a liquid powder, using a manual mill to make the powder softer and smoother. Next, the step of draining the powder is very important because it requires the maker to know how to mix the right amount of water in the powder and the right amount of salt. After mixing the water, it is put on the stove to keep the heat low and the maker must always stir constantly, so that the powder does not clump, and continue like that until the powder is flexible enough (not too dry or too sticky).

To wrap the cake, people here often choose banana leaves. The filling includes minced pork shoulder mixed with dried onions, wood ear mushrooms and spices such as pepper, white salt, then stir-fried until the filling is rich and delicious.

After completing the preparation steps, it will be the stage of wrapping the cake. Put a sufficient amount of dough into the banana leaf and put the filling in the middle, spread it along the banana leaf and roll it up, at the same time the maker must gently rotate the cake to make it round, the filling is rolled inwards, then fold the two ends of the cake.

After wrapping the cake, put it in the oven to steam until cooked.

After the cake is steamed, visitors can enjoy it.

Four-pillar sticky rice cake is also a specialty of Tho Xuan district. Sticky rice cake is mainly made in Tho Dien commune.

Each piece of cake is a wonderful combination of sticky rice, molasses, banana oil, green beans and shredded meat, creating a rich flavor.

The completed sticky rice cakes will be displayed at booths for tourists to visit and shop.

The people of Xuan Lap commune make Banh Chung very elaborately, especially the baking process. After wrapping the cake, it will be put into a ceramic jar surrounded by bricks and filled with rice husks and sawdust to bake. During the baking process, it is necessary to closely monitor to add more water to the baking pot. In particular, to make the cake soft and delicious, people will add more leaves to the baking pot. After baking for 24 hours, the cake can be taken out to enjoy.
