Nam O fish salad is named after a small fishing village located on the coast, about 10km north of Da Nang city center. According to the locals, there are two ways to prepare dry and wet salad, each with its own unique features, depending on the taste of the diners. However, both dry and wet salad are made from fresh herring with the same ingredients and spices, only the final processing step is different.
For the dried herring salad, Nam O people choose fresh fish, clean it, process it, slice it, cook it, let it drain, then mix the fish with typical spices such as rice powder, roasted sesame, roasted peanuts, crushed grilled rice paper, and many types of fish sauce, salt, fish sauce, and vinegar. This step will help coat the fish with a thin layer of flour, contributing to the rich, fatty taste of the fish.
On the contrary, the wet salad dish is made by cleaning the herring, marinating it with ginger, galangal, garlic, and minced chili and soaking it in broth mixed with Nam O fish sauce to create the unique flavor of this dish.
