One day in mid-September, a group of Mr. Pham Quang Thiet (29 years old, residing in Son Bang commune, Huong Son district, Ha Tinh ) brought hoes, shovels, and dozens of liters of water in buckets and cans to the field near their house to hunt crickets.
This season has rain and high humidity, crickets often build burrows, nests and breed in fields, paddy fields or vacant lots. According to local experience, newly emerged mounds are where crickets nest.

A moment later, the water flooded the nest, the crickets could not stand it and were forced to crawl out. Some crickets sensed danger and crawled close to the mouth of the cave but did not come out. At that time, the person accompanying them needed to cooperate, quickly use a shovel to poke into the ground, blocking the cave to block the crickets' escape route.
This is the season when crickets breed, so in many nests, hunters will often catch a pair of parent crickets. "In years with a lot of rain and high humidity, the crickets will be big and fat, but in years with a long drought, the opposite is true," Mr. Thiet shared.
After every rain, Huong Son people flock to the alluvial land along the Ngan Pho River to hunt crickets.
Many people go cricket hunting to relive their childhood memories and let their children experience it. Many groups of young people go cricket hunting together to bring home food for their families or as a snack. Cricket hunters consider this a seasonal job, so they bring a lot of water tanks and shovels to dig and hoe for extra income.
After catching crickets, hunters put them in plastic bottles or small cans. Crickets currently cost 1,500-2,500 VND/cricket depending on the time. There are years when the selling price of this rural specialty reaches 3,000 VND/cricket. In one day, a group of people can hunt 200-400 crickets, earning between 500,000 VND and millions of VND.
Crickets can be processed into many dishes such as fried with salt, lemongrass and chili, fried, fried in flour, grilled. In the past, this was a rustic dish, but in recent years, restaurants and pubs have bought crickets to sell to customers. Since then, crickets have become a specialty of the countryside during the rainy season, an interesting and enjoyable seasonal job, bringing in a good income for people during their free time.
