Following in her aunt's footsteps

Ms. Hai Yen said that this noodle dish has been around for a long time. At that time, it was only sold for a few hundred dong in Nha Trang, but now it is about 8,000 dong per bowl.

Sharing the question of why the name is used for hunger relief, Ms. Yen said that there are people who are still economically disadvantaged and have low incomes, such as lottery ticket sellers and students. A small bowl is just enough for the wallet and warms the stomach, helping to fill the stomach and relieve hunger. "Because it is for hunger relief and the price is cheap, the bowl of banh canh must be smaller than other dishes," Ms. Yen added.

Bringing the noodle soup to Saigon to sell, Ms. Yen said that partly she wanted Nha Trang's dishes to be known to more people. The other part was to preserve the traditional dish of her husband's aunt. "The noodle soup recipe of the restaurant was taught by an aunt in Nha Trang, now she is old so she has to retire," Ms. Yen said.

Ms. Yen shared that the restaurant has only been open for a month but the number of customers coming in and out is stable, one group of customers goes out and another comes in. Most of them are Nha Trang customers, young people and curious customers because of the name "Famine Relief Noodle Soup".

Sharing about the process of making a hot bowl of noodle soup, Ms. Yen said that she imported most of the ingredients from Nha Trang. After the fish was brought ashore, the fish meat and bones would be separated at the estuary and transported to Ho Chi Minh City. "I will grind the meat until it is smooth and supple, then the fish cake will be delicious. The bones will be used to make the broth, giving it a sweet taste," she said.

Ms. Ngoc Quyen (32 years old, living in Binh Thanh District) said that she lives nearby and heard that the restaurant had just opened and heard her family say it was good, so she went to eat there. "This is my first time eating here, but I quite like the broth here. It's rich in flavor, not too salty or sweet, the fish cakes are chewy and have a crunchy feeling, very delicious. A bowl of 12,000 VND like this is really worth the money and I should try it," Ms. Quyen said.

"I think the selling price is reasonable during these difficult economic times when many factories are cutting staff," Ms. Yen shared the reason for selling at 12,000 VND.
