According to Associate Professor, Dr. Nguyen Thi Lam, former Deputy Director of the Vietnam Institute of Nutrition, eggs left in the outside environment for a long time can spoil, the best way is to put them in the refrigerator. Signs of spoiled eggs are when you break them, the egg white is opaque than usual or the yolk sticks to the egg shell.
Egg surfaces are covered with dirt (soil, chicken and duck droppings) that contain disease-causing bacteria. You need to clean them thoroughly before storing them to avoid reducing their quality and the risk of poisoning due to the growth of harmful bacteria.
When storing eggs in the refrigerator, people need to pay attention to two issues: cleanliness and airtightness. Therefore, you should wash the eggs under running water, then let them dry. The second step is to put the eggs in a sealed box and put them in the refrigerator to avoid spreading bacteria to other foods and maintain good egg quality.

Eggs are a healthy food, egg whites are fat-free, rich in minerals and nutrients such as niacin, potassium, riboflavin and magnesium, good for health. Egg yolks have less protein than egg whites, but contain most of the vitamins A, B6, B12 and D, calcium, folate and omega-3, providing cholesterol, essential fatty acids. Therefore, the yolk is considered more nutritious.
Children can eat one egg a day, providing abundant choline, supporting the development of the child's brain and cognition. Adults eat 3-4 eggs a week.
If you have problems with fatty liver as well as high liver enzymes, especially those with moderate to severe disease, it is best to replace eggs with healthier protein sources.
