“Keeping the fire” of traditional moon cake making

During the Mid-Autumn Festival, for every family, delicious moon cakes are indispensable. Nowadays, moon cakes have changed a lot in flavor and color, there are also imported cakes from abroad, but traditional cakes are still chosen by many consumers, because of their unique flavor associated with childhood memories. Traditional production facilities are the places that have contributed to preserving the flavor of traditional moon cakes.

Starting from the 7th lunar month, many moon cake production facilities have been bustling. Among them, we can mention the moon cake making profession in Phu Tho town (old) from Mr. Hoang Quy. His son and daughter all followed the profession, opened shops and taught it to their children and grandchildren until now.

Ta Quyet traditional moon cake production facility is one of the famous facilities with nearly 100 years of age.

Continuing the traditional profession of his ancestors, Mr. Ta Van Duoc is the third generation grandson of Mr. Ta Quyet - owner of the Ta Quyet traditional mooncake production facility, now in Au Co ward. He shared: The family's traditional mooncake making profession was passed down to my father. He had 5 children, 4 of whom followed the profession and opened their own facilities. I am the eldest son living with my grandparents and parents, so I still keep the name of Mr. Ta Quyet. Mooncakes are made all year round, including weekdays, and are consumed as they are produced. During the Mid-Autumn Festival alone, my family produces about 10 tons of cakes and they are consumed throughout the province and beyond.

The cakes are golden brown and fragrant.

Moon cakes include baked cakes and soft cakes. Each cake has an outer layer called the cake crust and a filling inside. To have delicious cakes, with a unique traditional flavor, fragrant, soft and not sticky, from the stage of choosing flour to making the filling, pouring molds... all are done meticulously, strictly, ensuring technique and food safety. Along with the secret recipe of each establishment to make cakes plus the careful selection of ingredients, the traditional cakes have their own flavor, creating the vitality of traditional moon cakes.

During the peak Mid-Autumn Festival season, Ta Quyet mooncake factory produces about 1,000 baked and soft cakes every day. The products are sold out as soon as they are made, so the cakes are always fresh.

At the Nam Hai traditional confectionery production facility in Zone 9, Thanh Mieu Ward, on the occasion of Mid-Autumn Festival, dozens of workers are busy baking various types of moon cakes and moon cakes with different flavors such as: mixed flavor cakes, green beans, taro, green tea... Each type has its own unique characteristics in both appearance and flavor.

Mr. Nguyen Viet Hai, owner of Nam Hai Traditional Confectionery Production Facility, shared: Nam Hai Traditional Mooncakes have been around for nearly 40 years. Since I was a child, my grandparents and parents taught me the techniques of making cakes and left behind the traditional mooncake brand. Therefore, when making cakes, I think that each cake that comes out of the oven and reaches the consumer is not only for profit but also to preserve the family tradition.

Traditional moon cakes are always the choice of many diners.

Nowadays, to serve the needs of customers, in addition to traditional mixed fillings, moon cake production facilities also produce cakes with a variety of fillings such as: grilled chicken, salted eggs, green beans, green tea, red beans, taro, pandan leaves, durian... However, traditional mixed filling cakes still hold a special place in the hearts of diners, whether old or young. This is also the "private weapon" of traditional cake production facilities that industrial production can hardly replace.

In the modern life, traditional moon cake production facilities like Mr. Duoc and Mr. Hai’s family are not many left. With their love for the profession, they still strive, tirelessly pass on the profession, “keep the fire” for the traditional moon cake production. It is not only the desire to preserve the traditional flavor but also to preserve the culture for future generations.
