One of Chef Kirk's favorite dishes uses fresh ingredients from Dalat to create The Albion Tomato

From the succulent organic Dalat tomatoes, combined with a sauce prepared according to a special recipe, to the cool mint ice cream and the characteristic aroma of basil leaves. All blend together to bring diners into a unique culinary experience.

Chef Kirk and his partner Chris have created a menu that celebrates the best of British cuisine in Vietnam. Diners are surprised by the creative preparation, the variations on classic dishes such as strawberries and cream, roast chicken and thyme; and of course the famous British "fish & chips".

A whole roast chicken, the breast is slow roasted in the oven, drizzled with a rich thyme and chicken jus, while confit chicken legs and crispy stuffed wings add flavour and texture to this dish.

The grilled chicken is served with mashed potatoes, salad, charred corn and a chicken gravy with a distinctive aroma of thyme.

Chef Kirk and his team tried 20 different varieties of scallops and chose Hokkaido scallops for their distinctive flavor.

These scallops are grilled on a Josper grill using Japanese charcoal, creating a unique smoky flavor. The base layer is a perfect combination of grilled leeks and fresh pickled lemon. And to complete the dish, Chef Kirk pours a rich bacon sauce, promising to bring an unforgettable taste!

Each dish is prepared with the freshest ingredients, some sourced from organic farms in Dalat and leading suppliers around the world . At The Albion by Kirk Westaway, the Michelin-starred chef has brought his innovative spirit to an intimate space, inviting diners to enjoy exquisite dishes, suitable for sharing with loved ones.

Chef Christian Le Squer continues his culinary journey at La Maison 1888 by taking the restaurant’s classic French cuisine to new heights, combining it with the essence of Vietnamese cuisine. Each dish created by his talented hands is a work of art, offering a wonderful visual experience: bright, vibrant and beautiful.

The culinary style is extremely unique, with each dish bearing its own distinct and sophisticated mark, like a unique bottle of perfume or a high-end outfit showcased at Paris Fashion Week.

With a creative mind, Christian’s menu changes seasonally, using the freshest local ingredients, especially fresh seafood caught daily. Housed in an elegant Indochinese-style mansion designed by Bill Bensley, La Maison 1888 is one of the gems in Southeast Asian cuisine.

The $100 sandwich is a typical example of the effort to change and elevate the cuisine of Anan Saigon.

With diligence and ingenuity, Vietnamese people can make a delicious banh mi for about 20,000 VND (about 1 USD). However, at Anan Saigon, chef Peter Cuong Franklin has created a product worth 100 USD (equivalent to 2.5 million VND) because, as Cuong shared: "I want the banh mi to be luxurious with expensive ingredients but at the same time still maintain the integrity and balance of the aroma. This has created a sense of curiosity and attracted more people when talking about our traditional cuisine".

Anan Saigon is the first restaurant in Ho Chi Minh City to receive a Michelin star, founded by Vietnamese chef Peter Cuong Franklin. The restaurant was honored at the Asia's 50 Best Restaurants awards in Singapore. Of the more than 670 diners who left reviews after dining here, 419 rated the place as "excellent".

A La Carte menu with signature dishes such as Dalat Pizza, taco pancakes, foie gras spring rolls or Saigon Tasting Menu with 10 dishes and Chef's Tasting Menu with 12 dishes

The Saigon Tasting Menu is a modern interpretation of "classic" Vietnamese dishes like banh xeo. The Chef's Tasting Menu features dishes from all over Vietnam, like Hanoi fish cakes and fish sauce ice cream with Phu Quoc fish sauce flavor.
