Beef tripe is the stomach of a cow, it is called beef tripe because it has many layers like a book. This is the most expensive part of the cow's intestine. Since ancient times, people have used beef tripe to prepare many delicious dishes such as stir-fry, steam, stew...
However, this part also makes many people afraid because it is black and dirty. If you do not process it properly, it will smell and be tough.
Some Oriental medicine documents say that beef tripe is good for health, especially for people with stomach problems. However, like other internal organs, beef tripe can cause dyslipidemia if eaten too much. It is best to only change the taste 1-2 times a week, and not eat too often. People with high blood lipids and cardiovascular diseases should not eat it.
Note when buying beef tripe, you should choose the black type to process yourself; or you can choose the clean processed type with ivory color, you should not choose pure white products because they can be bleached. You should buy at reputable stores that sell fresh products on the same day. Be careful with frozen beef tripe because in some cases, authorities have discovered smelly products being transported for consumption.
