Smoked chicken

Chef Ryan brings 3 dishes: smoked chicken, braised pork leg with pickled shallots and young green papaya and skewered fish sauce hotpot. Regarding the smoked chicken dish, Chef Ryan shared that he combined many levels of flavor from sugarcane, lemongrass, Thai kaffir lime leaves, jasmine tea...; using the method of steaming chicken in a pot, using heat to affect the chicken to help the chicken to be soft but still retain the crispness and sweetness of the chicken. The time to steam the chicken is about 1 hour, only using heat to affect the ingredients, absolutely no water is used. This dish is served with sticky rice, cooked with chicken fat, with coconut milk and pandan leaves added to make the sticky rice more fragrant and fatty.

With the skewered fish sauce hotpot, chef Ryan creates a dish by skewering the ingredients on sticks to bring a new experience to diners. He also shares the secret to cooking fish sauce hotpot, to have a delicious hotpot broth, combine linh fish sauce and snakehead fish sauce.
