Noodle soup and rice noodles are probably the two most popular dishes in Tay Ninh . Here, people use round rice noodles, poured directly into the pot of broth (water) instead of boiling them separately, so the noodles are soft and absorb the spices very well. Tay Ninh people use wheat noodles, so they are clearer and chewier than noodles in many other localities. In particular, when these noodles are combined with vegetarian broth, cinnamon leaves, bean sprouts, chives, and roasted peanuts, they create a very unique and addictive smell.

Vegetarian broth is made from vegetables and mushrooms, so it is sweet and light. Many restaurants also add squash, bean curd, and dried straw mushrooms to the broth, not only to increase the sweetness but also to create a very pleasant aroma, creating a unique flavor for the dishes.

In particular, Tay Ninh people rarely use pre-processed vegetarian foods. The most popular topping is tofu (fried or white). Also pre-cooked in the broth pot, the tofu pieces are soft and smooth, juicy, customers can order more to dip with chili salt mixed with fried onions, squeeze more lemon, very tasty.

In addition to banh xeo, banh khot, bun cha gio, bun mam..., bi cuon or vegetarian bi bun chay is a popular snack of the people here. People stir-fry cassava (jicama), carrots, tofu to make skin, eat with vermicelli, herbs, cucumber... Instead of eating a whole bowl, people will use the dish of bi cuon in rice paper with herbs or water spinach, dipped in sweet and sour soy sauce or black soy sauce. Perhaps thanks to knowing how to combine ingredients and spices, bi cuon in Tay Ninh has a very balanced and refreshing flavor, so many people will remember it forever after eating it once.

The special thing is that the prices of vegetarian dishes in Tay Ninh are very cheap, averaging around 15,000-30,000 VND. A local even took me to eat noodle soup in a small alley near Long Hoa market, which costs only 5,000-10,000 VND/bowl.

Popular, delicious, and cheap vegetarian restaurants are often concentrated in Hoa Thanh town, especially the area around Long Hoa market or the streets leading to Tay Ninh Holy See such as An Duong Vuong, Nguyen Hue, Nguyen Van Linh, Hung Vuong...

On major religious occasions such as the 9th day of the first lunar month or the Mid-Autumn Festival - the 15th day of the eighth lunar month, the restaurant in the Tay Ninh Holy See offers free vegetarian meals for many days. Here, you will have the opportunity to enjoy many unique and delicious vegetarian dishes made entirely from vegetables, tubers, and fruits.

In January 2022, Tay Ninh's vegetarian cuisine was recognized by the Ministry of Culture, Sports and Tourism as a National Intangible Cultural Heritage. Anyone who has ever been to Tay Ninh to enjoy vegetarian dishes, regardless of whether it is a popular restaurant or a luxury restaurant, will admit that this title is completely deserved.
