Thanh Xuan account said that she learned how to divide the cake into small pieces, wrap it in plastic wrap, and freeze it. When eating, just steam it or use an air fryer, and the cake will still be as soft as new.

Trong Thi Hien Thao also shared that she used to put the whole cake in the freezer but it was difficult to use. Following the online community, she tried cutting the cake into bite-sized slices, wrapping it in plastic wrap and freezing it for easier storage and faster defrosting.

However, she also said that this method uses a lot of plastic wrap, affecting the environment.

"I came up with a solution by putting the banh tet in the refrigerator for a few hours to harden it, making it easier to cut without the knife sticking. Then peel off the outer leaves, keeping only the inner layer and then cut into bite-sized slices. Arrange the cake in a sealed box or zip bag before freezing. When eating, just shake it gently to easily remove the cake, the thin layer of leaves is also easy to remove," Ms. Thao shared.

Besides preserving, many people also create ways to reprocess banh chung and banh tet. In addition to frying them until crispy, the cakes can be pureed like porridge and then boiled until they form flat sheets like burnt rice. Some people try putting them in the microwave, air fryer or steamer to keep the delicious flavor of the cakes.

Experts recommend that if you want to preserve banh chung and banh tet for longer, you can put them in the freezer at -18°C, which will help keep the quality of the cakes for 1-2 months. Before freezing, wrap them tightly with plastic wrap or a vacuum bag to avoid dehydration and odors from the refrigerator.

When using, defrost properly by transferring the cake to the refrigerator for a few hours or overnight before heating. Steam or boil the cake again to soften it, keeping the sticky rice. In particular, do not refreeze the defrosted cake to ensure quality and food safety.
