Long Binh pork roll - a 3-star OCOP product (An Dung commune, Duc Tho district, Ha Tinh ) has crossed the "village bamboo fence" to reach the markets of many provinces and cities across the country.

Long Binh pork sausage production facility is owned by Ms. Pham Thi Binh (born in 1966, Ngoai Xuan village, An Dung commune, Duc Tho district). Up to now, Ms. Binh still does not remember exactly when her family's traditional profession began, only knowing that the main source of income since her grandparents, parents, and then her family all came from pork sausage production. Therefore, for her, making pork sausage is not simply for a living but also to preserve the traditional profession of her ancestors.
Although she was taught the profession at a very young age, the farming work and the responsibility of being the Head of Ngoai Xuan Village and the Head of Ngoai Xuan Village Women's Association meant that making pork roll was only a side job for Ms. Binh in previous years . It was not until 2012 that she devoted all her efforts and wholeheartedly to her family's "main" profession.

To create good quality products, ensuring a distinctive flavor, she devotes all her passion and enthusiasm from choosing ingredients, processing to preserving the products.
According to Ms. Binh, the input material is the most important factor, pork (butt, belly, armpit, shoulder) must be fresh and warm. Notably, Long Binh facility only produces from raised pigs (ordered for local people), not using pork from the market.
On the other hand, the meat must be de-veined; the fish sauce must be of good quality; the rice flour must be selected from the fields of Duc Tho. Only then will the ham have elasticity and a distinctive flavor.
The process of making a delicious meatloaf has to go through many stages, from selecting the meat, preparing the ingredients, marinating with spices to grinding the meat, wrapping, boiling... very elaborate and meticulous. After being ground, the meat will be mixed with rice flour in a ratio of 1kg of meat/0.5kg of flour and marinated with spices.
The “secret” to creating the Long Binh ham brand is also thanks to the ham boiling process. To make the ham evenly cooked and not soft, the maker must calculate the right time. The ham takes 3 - 3.5 hours to boil. If boiled for too long, the ham will stretch, leading to the leaves bursting and losing flavor.
"After boiling, the ham is left to cool and stored in the refrigerator. Long Binh ham does not contain colorants, flavorings or preservatives, so the maximum shelf life is 10 days," said Ms. Pham Thi Binh.

After 10 years of working in a traditional craft by hand, in early 2022, Ms. Pham Thi Binh invested more than 600 million VND to expand the production facility, buy steamers, grinders, storage cabinets... to upgrade the product to meet 3-star OCOP criteria.
Thanks to the methodical and quality investment, after a short period of time, Long Binh's sausage production increased from 50 sausages (1 kg/piece) to 80 pieces/day. With the selling price of 120,000 VND/kg, the monthly revenue of the facility reached nearly 300 million VND. The facility also created jobs for 10 workers with an income of 5 million VND/person/month.
In February 2023, Long Binh pork sausage won the potential prize at the "Ha Tinh Women's Creativity and Entrepreneurship" Contest and was recognized as meeting 3-star OCOP standards in May 2023. Up to now, Long Binh pork sausage has been available at major dealers in Hanoi, Ho Chi Minh City, Gia Lai, Dak Lak, Kon Tum , Dak Nong...

To meet market demand, Ms. Binh plans to invest capital to expand production to 100 hams/day in the near future.
Chairman of An Dung Commune People's Committee Bui Thi Bay said: Long Binh pork sausage brand is quite famous not only in the commune but has gradually spread to many other provinces. Not only creating more jobs for local workers, the facility also contributes to increasing income for people in the area, especially helping people consume agricultural products.
