At the end of the buckwheat flower season, people begin to harvest. Young buckwheat stems can be used as vegetables, dried buckwheat seeds, a part is fermented into famous wine, a part is ground into flour and made into the favorite cake of the Mong people. That is enough to see, that flower, in addition to its elegant beauty serving tourists on trips, buckwheat flowers are also used to process typical products of the entire Stone Plateau region, helping people here to do business and develop tourism.

Buckwheat Wine

The Mong ethnic group's buckwheat wine is made from buckwheat seeds, corn and leaf yeast. Buckwheat wine has been around for the past 10 years. To make buckwheat wine, people use a mixture of corn and buckwheat seeds in different proportions, commonly one part buckwheat seeds combined with two parts corn. The cook chooses beautiful, even buckwheat seeds and cooks them like rice. Good quality corn seeds are crushed, popped, and cooked thoroughly. After being cooked, the buckwheat and corn are mixed with traditional leaf yeast. The whole mixture is put into a jar and left to ferment for 15 days to become the mother wine. The next step is to use a cooking pot to distill the wine like other common wines. To have good wine, after cooking, the wine is buried in the ground for 24-36 months.

Buckwheat wine is clear, has its own unique flavor, not too strong, and is quite smooth compared to other common wines. The wine is not as spicy as rice wine, not as sweet as can wine, but a balance between the two. The Mong people believe that only men can brew delicious, rich buckwheat wine.

Buckwheat cake is a famous specialty of the Stone Plateau, made from buckwheat flour, water, and some other ingredients. This type of cake is often sold at highland markets. Buckwheat seeds are smaller than beans and are very rich in nutrients. The people here have skillfully ground them into fine powder to make cakes. The processing begins by drying the buckwheat seeds under the sun for about a week, until the seeds are completely dry and easy to grind. After grinding, they mix the buckwheat flour with water and knead thoroughly until the mixture becomes smooth and elastic. Finally, the dough is poured into traditional molds and formed into round cakes. Although it seems simple, grinding buckwheat flour is not easy. The maker must grind the flour by hand, and to achieve the required smoothness, they must grind very carefully to avoid grit. Buckwheat cake is soft, spongy, has a light sweet, fatty flavor, along with the attractive aroma of forest trees, making it an attractive dish. The nutritional value of the cake can vary depending on the processing method. Among them, steamed and baked buckwheat cakes are the ones that retain the highest nutritional content. On the contrary, fried cakes and crispy cakes often lose some of their nutrients due to having to go through more processing stages. According to nutritionists, buckwheat seeds contain about 2.42% tannin, an active ingredient that has antibacterial properties and supports the treatment of diseases such as enteritis, mucosal ulcers, diarrhea and digestive poisoning. In addition, each buckwheat seed also contains 2.41% flavonoid, a compound that contributes to the color of the seed. Flavonoids help prevent health problems such as atherosclerosis, liver degeneration, stroke, aging and support effective detoxification...
