Mrs. Ly Thi Thu, the creator of the specialty of jumping shrimp pancakes in Binh Dinh
Mrs. Nam's real name is Ly Thi Thu, 87 years old. When she was young, she got married and had a son. Her husband died in the war, she had no job, so she chose to make banh xeo to make a living.
"Banh xeo is sold everywhere. So for a newly opened restaurant, we have to make delicious banh xeo leaves to attract customers. So I thought of making banh xeo with live freshwater shrimp and flour made from the best rice. The raw vegetables served with it are green mango, thinly sliced cucumber, lettuce leaves, and herbs as fresh as if they were just picked from the garden" - Mrs. Nam recalls.

Customers know Mrs. Nam’s restaurant not only for its quality but also for its unique mark of still-live shrimps jumping on the pancake mold. There has been an unchangeable rule of the restaurant for over 40 years: customers, whether familiar or "VIP" characters, must line up when coming to eat. Mrs. Nam shared that the restaurant's principle is that the ingredients for making banh xeo must be live freshwater shrimp. Therefore, on days when she can buy a few live freshwater shrimp, she has to close early and never use other types of shrimp to make banh xeo.
