How to make dried grapefruit peel jam

Doctor Vu instructs to make dried grapefruit peel jam using simple ingredients including the peel of 2 grapefruits, a little salt, 140g white sugar, 1 fresh lemon.

Peel off the white pith from the grapefruit peel and cut it into bite-sized pieces. Soak the grapefruit peel in warm water mixed with a little diluted salt. Then gently squeeze the grapefruit peel for about 30 minutes.

Bring a pot of water to a boil, then add the grapefruit peel and blanch for about 5 minutes or until the grapefruit peel has a slightly bitter taste, then turn off the heat. Remove the grapefruit peel and rinse with cold water, drain.

Cook the sugar water to ensure the ratio of sugar to grapefruit peel is 1:1. Then, squeeze 2-3 lemon slices into it and soak the grapefruit peel for about 3-4 hours. Take the grapefruit peel out to dry and then dry it in the sun for about 3 hours (this depends on the weather and the dryness and crispiness of the jam if you want).

Once the desired dryness is achieved, put the grapefruit peel jam in a jar with a tight lid and you can eat it all Tet season.
